What inspired your career journey?

We have always been inspired by food and love creating bespoke dishes and ideas for clients. Weddings by nature are very similar when it comes to catering – Canapés, sit down meal, evening food. We try to add the client personality and individuality to this to create a personal journey for them and their guests.

What are your trend predictions for 2016?

We are seeing 2016 take a very classic and formal focus. Clients opting for luxurious three course sit down meals moving away from the popular sharing boards we have seen over recent years.

Do you live by any motto or philosophy?

Listen to what the client wants!

What would your best piece of advice be for someone beginning his or her planning journey?

Imagine yourself as a guest at your own wedding - what do you want them to feel, see, remember? Write this down and when it comes to witting the budget focus on these.

What's your favourite season, why?

We love the spring – there is a plethora of amazing food coming in after the heavy winter months. Vibrant greens and red berries pop on the plate and our gorgeous South Downs Lamb is at its absolute prime
