What inspired your career journey?
i was inspired to create an alternative to the ubiquitous cupcake, aiming to make fun, unusual, creative pieces of edible art and my main motivation has always been to create something delicious that also makes people smile. I get inspiration from design-makers from all disciplines particularly architecture, woodwork and graphic design.
What are your trend predictions for 2016?
I think experimental events will continue to thrive; anything that incorporates interactive, hands-on elements. It's a really exciting time to be in creative food in London as it seems pop-up food-focused events are becoming more and more popular. Specifically within the cake world, I think edible metallics and hand painting are the big trends for the year.
Do you live by any motto or philosophy?
My motto is something my mum has always said: "cooking is a game you can eat". I strive to keep that sense of fun in my work and hope that comes across in my designs.
What would your best piece of advice be for someone beginning his or her planning journey?
Once you've found the suppliers that fit with your brand/vision try to give them as much creative freedom as you can during the design phase, then hone it later - that way you'll get something you might not have ever thought of, and it'll make the most of their expertise to create something that really works.
What's your favourite season, why?
Right now actually. Definitely Spring - I love the sense of everything thawing out and beginning to thrive again; a perfect combination of freedom and anticipation. My absolute favourite day of the year is the very first one in which you can go out all day without wearing a coat (sometimes this is february, other years it's not until May!)
P.S and just for reference, what's your favourite word in the English language?
Thixotropic. it's that weird state that some liquids have (custard powder mixed with milk is one of them) - when you move it slowly it acts like a liquid, when you move it quickly its a solid. Crazy and wondrous!
